Chard to Extremadura

  • ½ kg. chard
  • 3 potatoes
  • 1 onion or scallions
  • 2 cloves garlic
  • oil
  • Salt
  • paprika
Processing instructions:
Clean and chop the chard and cook them in the pot with a little water and salt. Once cooked, drain and set aside.
Peel the potatoes and cut into small dice. Peel and chop the onion also tiny, season and put both deep frying, a little before they are potatoes add the chopped garlic (if incorporated initially burn).
When already we have fried in the pan remove excess oil and incorporate the chard and sauté a bit to blend flavors. Finally we add a small or just under teaspoon sweet paprika, we give some to the whole ridden my and serve in earthenware pots.
