Moroccan Tagine with eggs

  • 2 chicken thighs
  • 700g minced onion
  • 1 small bunch parsley, minced
  • 1 teaspoon smen "rancid butter"
  • 2 teaspoon turmeric
  • 1 teaspoon ginger
  • 2 cinnamon sticks
  • 2 pinches of ras el hanout
  • 1 garlic clove
  • 3 tablespoon cooking oil
  • 6 eggs
  • salt

In a pot over low heat, place chicken with spices, smen, oil, parsley, garlic and onion. Cover and cook the chicken covered in water disgorged by the onion. Once the chicken cooked, remove from the pot and reduce the sauce over high heat. Place half of the onion sauce in a tagine, have over the chicken thighs. Mix the remaining sauce with the eggs and pour over chicken. Place the tagine warm oven to take the egg and brown the top of the tagine. Serve hot.
