Tajine of Peas and Eggs

  • 2 eggs
  • 1 small bunch coriander
  • 1 chopped onion
  • 2 Spoon. tablespoons of cream or chicken stock
  • 2 Spoon. oil soup
  • 2 Spoon. olive oil
  • Salt and pepper
  • For the peas:
  • 200g peas small Scottish
  • 1l water
  • 1 Spoon. caster sugar in tea
  • 1 Spoon. teaspoon salt

To serve :

1 .tablespoon chopped coriander


In a saucepan, pour 1 liter of water, salt and sugar to a boil add the peas and cook 10 to 15 minutes. Drain and reserve. In a skillet over low heat, cook onion with the bunch of cilantro in the oil until translucent. Add the cream and chicken broth, peas and cook for 2 minutes covered. Add the eggs and cook, covered, for 3 minutes. Sauté the tomatoes in a little olive oil for 2 minutes. Garnish tagine with chopped cilantro and fried tomatoes. Remove from heat and serve immediately.
